Head Chef - Chef Din & Kitchen Staff

Chef Din is the Head Chef for the newly launched Columbia Asia Hospital - Petaling Jaya. He has been working in the food industry for more than 27 years. This is his first time working in a hospital environment.

Today Chef Din and CAH-PJ Kitchen Executive Mohd Sharil would like to recommend a special dish for you called Salmon Pasta. Salmon is a signature dish of this hospital.


Salmon Pasta
 
RECIPE
Salmon Pasta
Serves 4

Ingredients
 
  • Fillet of salmon, 80gm
  • Fresh oregano leaves (to cook with spaghetti), 5gm
  • Spaghetti, 200gm

Marinade  
  • Dijon Mustard (to marinade the salmon fillet), 40gm

Creamy Sauce  
  • Flour, 10gm
  • Unsalted butter, 150gm
  • Garlic, chopped, 20gm
  • Onions, chopped, 40gm
  • Carrots, chopped, 40gm
  • Red and green pepper, chopped, 80gm
  • Bay leaves, 5gm
  • Dried oregano leaves (to cook with cream sauce), 40gm
  • Parmesan cheese, grated, 50gm
  • Salt, 5gm
  • Ground black pepper (to taste), 20gm
  • Low fat fresh milk, 200ml
 
Method
  1. ­ Boil spaghetti in salted water until al dente. Drain and put aside. Sauté garlic in olive oil for 30 seconds. Add spaghetti and stir well.
  2. Melt the butter over low heat. Add in the flour slowly and stir until smooth. Add the milk while stirring constantly. Add other ingredients. Season with salt and pepper.
  3. Preheat grill with medium heat and grill the marinated salmon until it is cooked.
  4. Put spaghetti into a warm bowl. Pour the sauce over the pasta and salmon. Toss well. Sprinkle with parmesan cheese. Serve immediately

Healthy Eating Tips:
*Chef Din suggests replacing fresh milk with whipping cream. This option can reduce total fat by 30g per serving.
**Usually children do not enjoy fish because of the fishy smell. Chef Din suggests the fish to be sliced into smaller pieces and garnished with colourful vegetables. This interesting presentation will attract children’s attention.
